Baked Coconut cake with cream cheese frosting
Ingredients:
- 1 kg cake flour (not self-rising)
- 10 gm baking powder
- 5 gm salt
- 5 gm baking soda
- 200 gm unsalted butter, softened
- 150 gm granulated sugar
- 4 large eggs
- 1 tbsp. vanilla extract
- 150 gm sweetened cream of coconut
- 120 ml low-fat buttermilk
Cream Cheese Frosting
- 226 gm cream cheese, softened
- 150 gm unsalted butter, softened
- 2 tsp. vanilla extract
- 7 gm. salt
- 450 gm confectioners’ sugar
- 100 gm unsweetened coconut flakes
Method:
- First beat the butter and sugar together in machine bowl until sugar is dissolved, than slowly add the eggs one by one in the mixture and vanilla extract until mixture become smooth.
- Than in one bowl put cream of coconut and butter milk together than add the flour , baking powder, salt in that mixture.
- Than combined all mixture together in one bowl.
- Put the mixture in a cooking pan and bake it, 160 c temperature for 35 to 40 minute
- Make the frosting cream with cream cheese, butter; sugar and salt make it creamy.
- Then apply the frosting cream in the layer of cake and cover whole cake with frosting cream and the last cover with roasted coconut flakes.
- To add a twist you can even top it up with some seasonal fruits, or chocolate flakes
